Don't the indicators should still flash when it locks and wing mirrors fold in? Has on the hire cars I have had (non merc) that had this function.

The indicators did flash of course they did but as you didn't hear the click of the locks on this particular car like you would if you were standing by the car it left some doubt in your mind. These locks just made a sort of low buzzing sound. I always like to hear the satisfying 'Clunk' when I lock the car :)

Keefysher mentioned "double clicking" which I had heard about elsewhere. Does that really work?

Do you have an audio version of your manual then? ;):D to have 'heard' about it.

The simplest (and probably most effective) solution would be for manufacturers to implement measuring the latency between request and response. In the same way a parking sensor works, the car could then measure the distance between the key and the car and block any kind of relay systems.

They do this already but it's not foolproof.

It is if it's done properly - to quote a future Scottish Engineer, "You canne change the laws of physics" ;-)

Exactly. A difference of just 1mS is a decent distance.
The problem with latency based discrimination is that the time taken by the electronics to process the signal needs to be very constant. Just a difference of 1ms equates to miles.
If you're measuring end to end latency this becomes an issue as the request/response could be legitimately valid but fail if electronics are slow to wake or slow to respond. Every nanosecond of latency is approximately 1 foot of distance. That requires extremely accurate timing and processing speed to be useful and not generate false negatives.
High accuracy almost always equals high cost.
