Is there a way of finding out what torque setting an already tightened bolt was put in with?

Very much doubt it , too many variables like corrosion / threadlocker / spring or shakeproof washers to consider when removing a previously fitted and torqued bolt.

If you note which bolts torque spec you need there maybe someone that can help.

If you're talking about bolts on your Merc that you have just recently torqued up, without long periods of running since, then you can put the torque bar back on the bolts and check when it 'breaks' (clicks). That will give you a rough guide.
But if you're referring to other bolts that have not been disturbed for a long time, then you're snookered.

It’s the injector bolts. Because my new torque wrench has suddenly ‘vanished’ into thin air.
Difficult to say anymore at this stage however i believe I know where it is I am just not allowed access to where I believe it is!!!

Speak nicely to Cole and see if he can pop over with a torque wrench to tighten them for you.
