I am looking for the official Mercedes description of the material currently covering my seats, with a view to purchase replacements.  Can anyone help please

You haven't said what it looks like. However, MB can supply all material (as replacement covers or just material) from your vehicle id number.

The existing pattern is grey-ish, with faded thin red stripes.  Which is exactly why I didn't write it, it's a bugger to describe.  Any ideas on how to contact MB?  I assume I don't phone Germany

There should be a body-colour painted plate with loads of numbers on on the crossmember above the radiator. The numbers signify paint colour, upholstery fabric and colour, and options fitted (and some other stuff that I know nothing about). The following website explains the meanings. I don't think it will help on the pattern, but at least you will know what MB calls the colour!

...The other option, of course is to have the interior retrimmed in a fabric of your choice, or even leather. There are a number of companies who specialise in this.

Full leather trim may even be cheaper than buying the original material. Look at the adds at the back of various car magazines for places to contact.
