I suggestion, get down your local jetwash and jetwash the radiator, its amazing the crap that builds up

My 1995 C180 did that too. It would go up to 100 degrees within a few minutes of idling then wouldn't go any higher. The needle dropped like a stone when I started moving again and the radiator was clean. If you're pressure washing it, be careful not to damage it. The fins are very soft.

heating

i noticed after driving my water temp was above 80*c but not letting it hit 100*c thank god, the cooling fan was not spinning, it wasnt jammed but was surprised as all my previous motors would still spin the fan when switched off.
when i move the temp cools and with the heating it helps to normalise it just above the 80*c marker.

what area am i looking at to see if there is a fault with the cooling fan

i have hoovered the filter as previous suggested.
very concerned as i dont want serious heat gasket damage with the heat, i often get stuck in traffic which is why i need help quick

I do not know what fan is on your car but,
Thermo fans cut in at 85
electric fans cut in at 100
