CAN Network - what is it? What does it control?

I understand it’s a message signal and in simple terms it diverts signals to the units that are listening for those signals. But what areas of the car are sending messages? Got a V-class.

I have 47 units that appear on my iCarsoft, when plugged into my V220. They all chat away over the network I guess.
No idea if there is a central location..
