Door plastic skin

What's the purpose of the skin of plastic behind the door card?
I can only think that it has an anti condensation purpose.

Any other thoughts?

You are spot on. It's a condensation barrier and quite important to keep intact.

It's a shower curtain effectively. The scraper trim that sits on the outside of the door against the glass is not totally water tight. Quite a bit of water gets past it and into the door. It drains out the bottom through some drain holes if you get on your knees and have a look. To stop the inside of the door card getting soaked and water getting into the car footwells they fit a plastic door membrane. If you have to detach it to access the inside of the door you'd be well advised to make sure it goes back nicely. You can use some gaffer tape to patch it up if it's holey. It works surprisingly well.

It’s there to stop rainwater getting into the car.

The rubber seal at the bottom of the window doesn’t stop all the water going into the door. So the plastic is there to stop the water getting into the car. There are drain holes in the bottom of the door that the water should run out of.

If you tear or damage the plastic expect wet door bottoms and footwells.

I had to replace the seal on the doors in the 911 as the door cards had been taken off previously and whomever had done it had damaged the seal.
