I recently replaced the thermostat in my 190E.

However, after the job was all done, the low water level light seems to have come on ? What went wrong?

Any ideas? :?

Low water light is probably a sensor in your expansion tank. Is the level low? Perhaps a faulty switch on the sensor or a loose connection if the level is correct.

Did you bleed the system once you put the thermostat in? According to the manual on my 124, you have to get all the air out of the system by priming it by squeezing the pies leading to the thermostat.
