If it runs well without the MAF sensor plugged in, this means all other sensors are working ok. When the MAF sensor fails, (and you are simulating this effect with the MAF sensor unplugged) then the ECU uses a back up programme which allows the engine to respond quite well. If the engine did not respond well to an unplugged MAF sensor, then this would indicate another problem is present. Therefore I would deduce the MAF sensor is faulty.
