They will rust absolutely everywhere. Floor plans, inner arches, boot floor, and that's just the stuff you can see. But if those bits are ok, at least you have a solid base if any more is found later.

I just changed the starter on my c55 which involved taking that side exhaust downpipe off, was straight forward, I don't know if yours requires the same for access, but make sure you have some new exhaust bolts ready if it does!

The round plug on the pump is what actives the lock/unlock, but, it operates a little like a house light where there are two switches for the same light, so there isn't an "un-lock" and a "lock" wire
These cars really aren't fast. I had a 250se a few years ago, I cannot remember the top cruising speed, but it was somewhere in the region of what you said, maybe 65, they rev really high but will do that all day
It's all about the car. I often only end up keeping a car for a year, or less, but it always leaves my ownership in much better condition than I bought it in, but on paper my short ownership will be off-putting for some.
