Replaced the sensor and fan has now stopped. Live data is showing correct temp now. Thanks for all the advice with this, my van dosent sound like an aeroplane anymore ;) Much appreciated!

Yes definitely. I'd also like to add that the previous week to this happening i had the engine management light on for "Exhaust pressure sensor". This turned out to not be an issue with the sensor but the thin tube the sensor sits in is prone to getting blocked. MAF cleaner down the tube and metal wire attached to a drill cleared this tube in less than hour. Common issue with the W447 vitos.
A garage told me they would need to remove the exhaust manifold to remove the metal pipe and replace the pipe. I was quoted £600.
For the fan issue the van went to 2 garages and none of them fixed it.
