Engine coolant temp on 2013 Sprinter 3500

Hello, I am new but have noticed my new temperature digital readout for coolant temp shows 190 F running down the road but under a load going
up a grade it may spike to 230 F. Just curious as to what others notice on their engine coolant temps.

Not sprinter specific, but always sits where it should be.

That coverts to 87 and 110 C.
87 good, 110 high. But the 651 engine can fluctuate quite a bit and yours is pulling some weight.
