When changing brakes, how do i keep handbrake off c200 2017 model ?

You need to set the calipers to workshop mode. They will run in reverse until the handbrake is all the way off. Access the workshop menu by turning key to pos 1, press "ok" and "call accept" on the steering wheel ( almost at the same time, call accept fractionally before ok ) and a hidden menu will appear. The brake replacement function is in there. There are plenty of YouTube vids. Our very own KillerHERTZ has one.
