It seems crazy to me that id one diode on a boot mouted High Level brake light becomes defective, the only solution is to buy a replacement unit.

Surely it must be possible to solder a replacement diode onto the PCB?

Has anyone tried this?

I've repaired the lights on a mobile phone before now, so yes, its possible.

I've changed the bulbs on a car stereo and changed the cold cathode on an Ipaq, the bulbs inside Ford window switches so yes, most of these things can be done with a little effort. It's just not economically viable for a repairer. The hard part will be finding the matching LED so it doesn't look odd. Replacing it as you say is likely to be a re-solder job, though you never know for certain until you've taken it apart.
