merc v-class running temprature

hello there , just discovered this forum so i hope someone can shed some light on my little query....
just had a head gasket replaced on my v-class 230 ambiente(petrol) and would like to know the avarage running temprature and at what temprature should the sensor kick in for the cooling fan?
reason i ask is because it seems to fluctuate between 80+110 is this normal?

Hi I was getting the same. MErcedes of stoke told me it was normal. Useless bunch of grease monkeys.

Took it to my LPG chap up in nots who noticed that the wiring to the fan was shoddy.

There are 2 speeds on this fan 1 kicks in as standard at about 80 (I think) and then the second speed if it gets over 100.

Was simple to fix check relays and wiring.
