Hello. Picked up my E Class yesterday, spent most of today detailing it and trying to figure out what all the buttons do. Pressed the one on the on the interior light panel (hidden under the plastic flap), a red light came. Pressed it a few more times to try and turn the red light off, and after 20-30 seconds my car started speaking to me in an american accent asking how it could help me.

At that point I decided I should RTFM.

Does this catch everyone out?

Welcome Arrizabalaga, pressing buttons is the way most of us find out how things work. The manual just clarifies things a little.

Welcome. As you have found, the SOS button is hidden behind a red cover for a reason. Make sure you don’t also try the passenger ejector seat button by mistake! ;)
