That's new information, and because the Mot advisory was made before your adventures with water, I now suspect that changing the fluid - although necessary - is not the answer to your stiff steering. More is involved, so it's worth checking the tension of your drive belt first, and then prepare yourself to change the steering pump if there is no change from these measures.

Okay. Dilemma. Do i need 'CHF 11S' equivalent or 'Dexron II' equivalent?

If it says CHF 11S that's what you should use.
About £8 per litre from ECP. Halfords also do it.

By the looks of it, Dexron II is for automatic transmission and CHF 11S is for manual transmission. Is this correct?

Okay. Have pumped out initial fluid. This Youtube video has conflicting advice. The vide suggests turning the steering wheel with the engine off, but a comments warns Not to do that. Which is correct?

Cant help re steering fluid but id try to keep the mot anyway as it may pass with the new fluid or may fail on other things you dont know about.

You dont want to fix this and get a fail on some unknown problem in december...

Also with a pass you can legally drive it to pick things up so may be easier to fix the steering issue.

Unfortunately after changing the fluid the steering was still way too heavy and that will cause an Mot failure. Thus I am going to get a second opinion as I believe it could be the pump now. Disappointed and even more frustrated however I never give up,.....ever!!!!

It appears that to remove the hydraulic pump there are just three bolts plus the hoses to un attach after first draining out All the fluid. Would this be correct?

Is there any way of testing a replacement power steering pump before putting it in?
