Can anyone tell me if I upgrade the Mercedes head unit in my E240 to another make whether my steering wheel controls will still work?

no they won't. Only MB units work with the wheel controls.

Some units you get you can buy adapters for - so you can use your standard steering wheel controls with a different head unit. If you ask in Halfords they can usually tell you which units will be compatible with your car(not all are) and supply the extra wiring needed.
