In answer to your questions:
Yes,
Yes,
Yes.

You need to remove the airbag first and then the wheel.
It is advisable to disconnect the negative lead on the battery before you begin and you'll need a torx 30 bit to remove the airbag.

The airbag!!
Be very careful with this as it contains an explosive device. Don't rush into this job. Is is pretty straight forward but you really must work with caution when handling the airbag.

Make sure the wheel is in the straight ahead position. Disconnect battery. Make sure there is no danger of the battery cable accidentally reconnecting whilst you are working away.

Then undo the two torx screws on the back of the airbag. Carfully unplug the airbag cable in the centre rear of the airbag (it just pulls off, but do it gently). There are also two other wires that connect along the top of the enclosure, just pull these off.

Then undo the steering wheel bolt with a breaker bar. The wheel will come off easily once the bolt is out. Make sure the position of the wheel is marked up against the spline.

With the wheel off, you will be faced with the clock spring (squib). You need to be very carful with this. It is important that the spring does not turn whilst the wheel is off. There are two screws going right the way through it. You need to slowly undo these screws but only enough to allow the squib to come away from the boss. Do not allow the screws to come all the way out as they help to prevent accidentally turning the spring.

With the clock spring off, you should see three screws that hold the combination switch in place. IIRC one of them also holds the CC stalk in place too. Remove all three screws and both stalks will come free.
Install your replacement stalk and screw in the three screws.

Carefully replace the clock spring, again ensuring that it does not turn at all. Screw the two screws back in.

Put the wheel back on, ensuring it lines up with the same markings you noted when you pulled it off. The wheel nut needs to be done up to 80Nm.

Again, carefully connect the airbag up and the two other flying cables. When you do up the torx screws to the rear of the bag, be careful not to over tighten them or you'll have trouble removing them in the future.

Make sure the key is not in the ignition and reconnect the battery. (Do not reconnect the battery until everything is back toether.)
Make sure no one is in the car when you re connect the battery (just in case).

With the battery connected, stand outside the car and insert key. I always look through the windscreen at this point, as it acts and my shield. Start engine and check that the SRS light goes out on your dash after a few seconds.
You'll probably have and ESP/BAS light up on your dash. Just turn the wheel lock to lock a few times until the lights go out.

And that's it, you're done.

Think I've covered everything.

Let me know if anything is unclear.

I think that you should add the the air bag is held with torx 30 screws and the size of the steering wheel nut

then the post is so good it could go into the DIY section:D:D

If you have a DAS3 system, then you don't have to disconnect battery but key MUST be removed from ignition though. Also, I think Torx T30 is too big - poss T27. Steering wheel is 10mm allen key type + it's tight!!

leave the airbag alone once you have disconnected the battery for a half hour to let the capacitor discharge or the airbag can still go off causing some damage . this goes with all air bag situations

My W202 is on a 1999 plate and that has torx 30 for the airbag and 10mm allen key bolt for the wheel.
I bought the torx 30 bit from the Stealership as I didn't own anything long enough to reach the screw heads. (They're quite a long way up there). The bit only cost a couple of quid.
