My W124 Coupe has just had the head skimmed and a new gasket put on. Two weeks later (Saturday) the car started using huge amounts of coolant (1 litre per 50m driven). Now I can't see any leaks and the oil looks fine. Where is the water going?

It can only go on the ground , into the oil or be coming out of the exhaust, there is no where else.

Then check the radiator cap if it is leaking. You can this by filling the radiator with water full (only when engine is cold) and then start the car and leave it to idle till the engine get to operating temperature. Leave the bonet open and see from a safe distantance and see if the cap is releasing any water when it is hot. Please stand far from the radiator cap because the water is very hot. If you see water comming out the the cap is faulty, change it.

I had a SAAB that had this exact radiator problem. Rubber seal looked good, but a replacement cap solved the leak. A tell-tale sign is anti-freeze coloured dribbles down the side of the translucent coolant bottle.

are you sure the system was bled to remove all the air.

rad caps are notorious and should be changed quiete regularly (like a service item) believe it or not as they are pressure regulated the seals/spring often deteriorate.
it will have a number on it to id its pressure rating.

look close and hard and you will surely find the leak, check all the hoses top and bottom and the clips.
if the hoses feel soft - change them

how much have you topped it up so far

I hope it is the radiator cap or airlock. It could also possibly be the head gasket - unless fitted 100% correctly, it will fail and you will get water leaking into the cylinders . I would take it back to the garage - assuming it wasn't losing coolant before?- and tell them to rectify it, as it appears to be a fault they've introduced?
