It depends on the car,and if you have a cable or electronic speedo. if it is cable then withdraw the inner and lightly oil making sure that that sharp bends in the cable.

My '94 w124 is a cable, so I'm pretty sure yours will be too.

Malcolm, can I pull the inner cable out from its sheath from the top, or will I have to disconnect it from the gearbox (and will I have to 'undo' the termination on the gearbox end of the cable once it's removed) if that makes any sense? :)

You can pull out from the top, without undoing the gearbox end, safest way is to rotate the inner as you pull it out.
Do the same putting it back, and its located once it will not turn.
You only need to undo the gearbox end if the inner is broken, to get the end out.

Cheers Malcolm, no excuse not to do it now!

Would soaking the cable in oil, pouring oil down the sheath, or smearing the cable with grease be the best option?

funnel it

This was the method I used on my motocycle cables.

If the end of the sheath can be held vertical make a funnel over the end of the sheath with some tape and some cardboard about 1cm deep and put oil in it quickly to the top and let it flow into the sheath the funnel lets any air bubbles come up (but it may just drain into the sheath anyway) then do it again depending on the length and how you feel about it. In the meantime oil the cable. 3 in 1 oil is good enough I find.

Cheers
