I stripped out all the wood trim in my W124 prior to it going into the bodyshop. Then took it to a retired wood restorer, he called me a short while ago and said he couldnt redo it because its plastic. But i'm sure I've seen posts where people have stripped back the laquer and refinished these parts. Or is he right and they are plastic?

Yep formica any many parts, hence the spitting that can happen

This could be an age thing, possible that some early ones had wood on the gearshift cover.

Its possible to take the formica off and veneer it, some parts were wood

The 202 is all formica that came out in 1993/4

Do a search for Di-noc vinyl, its amazing.
There are people who sell fascia part sets.
