I recently removed the cat from the exhaust on my 500SL 1991 and welded it back together and the 2 Lambda probes are still on the exhaust system. My question is will running without a cat cause problems ie. to engine, fuel consumption etc. I assume the engine will run weaker.

Any thoughts please?

No it will not cause any problems, some web sites that sell CATs say the opposite, many people do it.
