I think Merc's definition is anything over 25 years old, except the 107, which was in production for 19 years, and was called a classic by them when they ceased production.
As for what really is a classic, I think you have to go wider and see what the RAC or other august body would define. I bet it's more than 25 years old though.
Everyone has their own definition. The DVLA have the concept based solely on age as do insurance companies though their age rules vary. At the end of the day, it's in the eye of the beholder. One man's classic is another's old banger!
I saw an ad for a Cortina cabrio the other day - described as a rare classic. My description would be 'skip with ford badge attached' - but there you go.
The closest I can come to would be - out of production and still thought of fondly. Perhaps something that many people would dream of owning. Also ideally something that broke the mould, like a Beetle, a mk1 golf gti or a Sierra Cosworth perhaps.
