im looking at buying a W210 E55 AMG and have been reading a lot of threads on here. I know that apart from rust issues these cars are pretty bulletproof if they have been maintained properly.

Would you be very weary of a car that has full service history that isnt MB for the last year or so? Or is it seen as essential for it to have FMBSH even though the cars in my budget are 98/99/00 models.

FMBSH is essential - however, thats a lot different to FMBD(ealer)SH
If its an MB specialist then thats fine and if its just 12 months then it really isn't that important - so long as a specialist has or will look it over in the near future. Its only when scheduled things start to get missed after a couple of years or when non OEM parts start creeping in but it's doubtful that much of this has happened in just a year.
