E190 overheating

after change the water pump i thought i was having trouble with air locks but i think the problem arises from the cooling fan not cutting in to cool the motor . the only time the fan cuts in is when the dehumifer is ingaged. does this right. now if there is a sensor for the fan where would i find it

There is a switch behind the thermostat that controls the fan clutch.
There are 2 types depending on the age of your car, a 3 pin one(H) and a 2 pin one(G)
You can test the clutch is working by linking the 2 pin plug and the fan should start.

PS I presume you have a 190E, not some obscure E-Class
