wow, would have to be doing that myself. be sure as poss you have sourced all/any external leaks that may have contributed to the failure and check the head really well for crack when off .i would be taking valves out to look and if nothing seen on head or gasket i would have the head press tested, as i would NOT want to do job 2x !! inspect old gasket for definitive sign of failure when its off . think you can find guidance on ut for this job...dont be in a hurry. i would have thought yr local engineering business would ,if needed, skim yr head for £50 ,if you strip it..its not a big job . try to establish max that can be removed/skimmed to save engineering co wasting time looking for that info.

I suppose it comes down to......
How much is the car worth
How much is the car worth to you
what sort of condition the car is in.

I always think along the lines of "its going to cost me more to get another car" and due to the fault, vehicle not worth that much.
I am sort of in the same situation with my old w163, every time something goes wrong i think to get rid, then think it will cost a lot more to replace, so i fix it and wait for the next thing to go wrong.

Good luck

Nothing wrong with the car! No gasket/leaking gases problems. Leaky radiator hose, that's all for the leak. Sailed through MOT too. Gorgeous.
